      Hi Jea, I would be more than happy to share this recipe with you. It is absolutely delicious and I make it quite often and never get tired of it. It was given to me a while ago from a dear friend’s nonna. I hope you enjoy it. Did you become a member of the blog?       Pasta Fagioli

      Ingredients:
      6 cloves of garlic- minced
      1 small onion- chopped
      2 celery stalks – sliced
      Sprinkle of real bacon bits (I use pancetta)
      Olive oil
      2 cans or boxes of 32 oz. chicken broth (or homemade broth)
      (1) 15 oz. can of petite diced tomatoes
      2 cans of cannelloni beans (mashed)
      2 cans of cannelloni beans -drained and rinsed
      Dried oregano
      Salt and pepper
      Ditalini pasta
      Grated cheese
      • Parmesan rind – optional

      Procedure:
      I saute, 4-6 garlic cloves & 1 small onion, both chopped, with 1-2 celery stalks,(sliced) & a sprinkle of pancetta (or real bacon bits)…in olive oil
      After a few minutes, add chicken broth, 2 cans or containers.32 ounce each (or homemade), and one 15 oz. can of petite diced tomatoes
      Then add, 2 (15 oz.) Cans of cannelloni beans (mashed)–I put them in my blender for a few seconds).This adds a little thickness to the soup, salt & pepper & a dash of oregano….
      Let the soup cook for a half hour or so,
      When done add 2 more 15 oz. cans of drained cannelloni beans..
      Add ditalini pasta.*…of course you have to adjust ingredients to how little or a lot you want to make…
      Sprinkle grated cheese and serve with toasted crusty Italian bread

      *I usually make my pasta separately and add it to each individual bowl before adding the soup, because if there is any leftover soup, the pasta will expand and absorb all of the liquid.
